Chicken Mousse Recipe
Ingredients
- 215 g chicken breast, skinless
- 100 g double cream
- 1 egg white
- ¼ tsp salt
- pinch of white pepper
Method

Remove all sinew and membrane from the chicken and cut into approx. 1cm sized chunks. Place in a blender along with the rest of the ingredients. Blend on full speed until you have a smooth paste. Refrigerate until needed.
