Chicken Mousse Recipe

Ingredients

  • 215 g chicken breast, skinless
  • 100 g double cream
  • 1 egg white
  • ¼ tsp salt
  • pinch of white pepper

Method

  1. Remove all sinew and membrane from the chicken and cut into approx. 1cm sized chunks. Place in a blender along with the rest of the ingredients. Blend on full speed until you have a smooth paste. Refrigerate until needed.
