Yet another really simple and really delicious sweet treat to make with Peanut Caramel. A formal recipe is barely needed for this – just cook the corn until it pops (don't forget to put a lid on the pan), then add the Peanut Caramel. Mix, shake and serve. Then put on a good movie and revel in the contentment.
You'll need a medium-large saucepan or casserole with lid, and another smaller pan for heating the Peanut Caramel. It helps if it's a metal pan and lid as you'll easily be able to hear the corn popping.
Peanut Caramel Popcorn Recipe
Ingredients
- 1 tsp vegetable oil
- 3 tbsp corn kernels
- 1 pinch sea salt
- 50 g peanut caramel
- 10 g butter
Method

Place a medium-large pan or casserole over a medium heat and add the vegetable oil. Wait 1 minute for it to heat up, then add the corn kernels and the salt. Put the lid on a give it a good shake to coat the kernels in the oil. From the moment the corn begins to pop, leave on the heat for 5 minutes further or until the popping has stopped, shaking frequently.

Add the Peanut Caramel to a separate pan and warm gently over a medium-low heat until melted and soft. Add the butter and stir to combine. Remove the corn from the heat once it's finished popping then add the Peanut Caramel and butter. Stir with a spoon and/or shake vigorously until the popcorn is nicely coated, then serve.
